Cathay Pacific is bringing more exciting ‘Hong Kong Flavours’ to the skies with thoughtfully designed menus created in partnership with local Michelin-starred restaurant Duddell’s. The promotional menus bring a fresh, curated interpretation of beloved local specialties.
On Wednesday (February 22, 2023), Cathay Pacific announced the launch of new exciting menus featuring more exciting 'Hong Kong Flavours' created in collaboration with local Michelin-starred restaurant Duddell’s. The promotional menus celebrate the city’s gourmet culture with fresh, curated interpretations of much-loved local specialties. A stalwart in Cathay Pacific’s onboard dining position, Hong Kong Flavours not only showcases the city’s most popular and iconic dishes, but also reflects the airline’s aspiration to connect Hong Kong to the world through these culinary creations.
In today’s announcement, Cathay Pacific’s General Manager – Customer Experience and Design, Vivian Lo, said,

By partnering with renowned Hong Kong restaurants, we hope to give our customers an unforgettable introduction to our city’s culinary offerings and a comforting reminder of the taste of home.”
Also commenting on the culinary collaboration, JIA Group’s Chief Executive Officer, Yenn Wong, said,

“As Duddell’s serves Cantonese cuisine, the theme is unquestionably Hong Kong-inspired. We want to create and bring Hong Kong’s traditional flavours, with easy access, to different parts of the world. The team has curated an extensive menu that caters to First and Business class, from appetizers through to desserts.”
Cathay Pacific’s First and Business Class customers traveling on select flights departing Hong Kong can enjoy the new promotional menus, with a refreshed selection of dishes throughout the year.
First Class guests can select one choice from a range of appetizers, including chilled abalone and cucumber with black vinegar, or minced pork with mixed vegetables and pomelo, served with lettuce wraps and prawn crackers. Next, they will move on to a choice of exquisite main courses, such as red braised Ibérico pork belly with radish simmered in a sweet, sticky glaze of soy sauce, sugar and a special chef’s blend of Chinese spices. Another exciting choice is the wok fried lobster in white pepper sauce with spring onions and ginger, a nod to the Singaporean specialty, white pepper crab. One of the dessert highlights is a light, refreshing chrysanthemum and longan jelly, which combines the delicate, floral aroma of chrysanthemum flowers with the mild sweetness of dried longan, both used in Traditional Chinese Medicine for their health-promoting properties.

Business Class guests will also enjoy newly designed starters such as drunken prawns with aged Huadiao wine, and shredded chicken jellyfish salad with sesame dressing. Delicious main courses include steamed halibut with cordyceps flowers, aged mandarin peel and preserved black olives, or barramundi fillets with pickled mustard greens in hot and sour rice noodle soup, which is available throughout the flight. For dessert, customers will enjoy indulgent choices such as ginger milk pudding, which pays homage to the Cantonese dessert of ginger milk curd, or strawberry yogurt pudding, which takes its cue from the sweet, tart Beijing-style yogurt.
Opened in 2014, Duddell’s is located on the historic Duddell Street in the heart of Central Hong Kong. The restaurant boasts a chic and relaxed interior designed by Ilse Crawford, as well as noteworthy exhibitions on the walls. Duddell’s was designed to feel like guests have been welcomed into the home of a great art collector, which happens to have an in-house Michelin-starred culinary team. Additionally, the restaurant features a year-round program of world class exhibitions, discussions and more.
