Air France Unveils Spring Menu for Long-Haul La Première and Business Class Guests

From March to June 2023, Air France’s La Première and Business guests traveling on long-haul flights departing Paris will enjoy a new series of exceptional dishes. The menus have been created in partnership with chefs Mauro Colagreco, Angelo Musa and Régis Marcon.

On Thursday (March 9, 2023), Air France unveiled their new spring menu for customers traveling in La Première or Business Class on long-haul flights departing Paris. From March through June 2023 premium guests will enjoy a series of exceptional dishes created in partnership with a trio of accomplished chefs including Mauro Colagreco, Angelo Musa and Régis Marcon. In designing these menus, which showcase French haute cuisine onboard, the chefs have worked in partnership with Servair, a global leader in inflight catering, with a focus on fresh, seasonal and local produce. As part of Air France’s commitment to a more responsible catering offer, the red meat, poultry, eggs and milk products are of French origin, while the fish has been sourced from sustainable fisheries.

Air France has entrusted the menu of their prestigious La Première suites to Menton, France-based Chef Mauro Colagreco, a three Michelin-starred chef and UNESCO Goodwill Ambassador for biodiversity. Chef Mauro has crafted eight flavorful dishes that will be revealed between March and June, using only seasonal produce.


Speaking about his inspiration for the spring 2023 menu, Chef Mauro Colagreco said,



“I was inspired to create these dishes by our region in the south of France, the Alpes Maritimes. There is a whole range of ingredients from the sea, the mountains, citrus fruits and the famous Menton lemons. I would like passengers in the La Première cabin to discover each product and its history so that their meal is a real moment of culinary pleasure suspended in time.”

For dessert, La Premiére guests will enjoy elegant and sweet selections worthy of the finest restaurants. The dessert menu has been created by Chef Angelo Musa, Meilleur Ouvrier de France and the World’s Best Pastry Chef. For this bespoke series, the chef has signed a selection of four desserts, where balance, delicacy and harmony of flavors meet.

Also commenting on his culinary collaboration with Air France, Chef Musa said,


“It’s an immense source of pride to work with Air France and to invite La Première customers to discover my desserts. For me, Air France embodies French excellence, just like my profession.”

Air France Business Class guests will be treated to a series of refined dishes created by Chef Régis Marcon, the triple Michelin-starred chef and Bocuse d’Or winner. Inspired by nature, Chef Marcon draws inspiration for his unique dishes from the Ardèche and Auvergne regions of France. He has signed a selection of eight gourmet dishes, which will progressively be revealed for an unparalleled fine French dining experience aloft.



Speaking on his inspiration for the spring 2023 Business Class menu, Chef Régis Marcon said,


“Cuisine can only be beautiful when it is close to nature. This is the emotion I would like to transmit to Air France travellers.”

As part of their fight against food waste, Air France offers Business Class guests the opportunity to pre-select their hot onboard meals up to 24 hours prior to departure, thereby guaranteeing the customer choice, while reducing waste. For 2023, Air France is collaborating with 17 top chefs who value French excellence, to create exceptional dishes for long-haul La Première and Business Class guests on departure from Paris, as well as in the carrier’s Paris airport lounges. With each new menu series, Air France reaffirms their role as an ambassador of French gastronomy and know-how worldwide.
