China Airlines Partners With Michelin-Starred Restaurant MIPON for Classic Taiwanese Cuisine Aloft

China Airlines has partnered with MIPON, the Michelin one star restaurant at the Grand Mayfull Hotel Taipei, bringing ‘Starred Taiwanese Cuisine on the Clouds’ to their onboard dining experience.

On Thursday (March 28, 2024), China Airlines announced a new partnership with MIPON, the Michelin one star restaurant at the Grand Mayfull Hotel Taipei, bringing classic Taiwanese dishes to the skies.  The new ‘Starred Taiwanese Cuisine on the Clouds’ menu will debut on April 1st, 2024 in all classes on regional routes departing Taiwan, including flights to Southeast Asia, cross-Strait, and select routes to Japan and Korea.


In Thursday’s announcement, China Airlines’ President, Kao Shing-Hwang, said,


“As the leading airline in Taiwan, China Airlines is committed to offering travelers the best flying experience and is continuing to form collaborations with leading culinary experts on different routes.  The exclusive cuisine crafted by MIPON for China Airlines uses local, seasonal ingredients and is aligned with the airline’s ‘sustainability and environmental protection’ philosophy.  China Airlines continues to enhance the quality and diversity of its in-flight catering, making every flight feel like a homecoming to travelers.”

MIPON’s Head Chef, Chen Yong-Hua, uses time-honored cooking skills passed down for generations to bring back beloved Taiwanese flavors, presenting the unique elegance of Taiwanese cuisine.  Local delicacies are translated into culinary creations, which are infused with Eurasian techniques that breathe new life into classic Taiwanese dishes, which have netted MIPON one Michelin star three years running.  The onboard menu collaboration draws on MIPON’s in-house menu to produce 15 dishes for all classes.    


The Business and Premium Business Class menu features an Abalone and Sous-vide Chicken Breast with Plum Sauce appetizer, followed by a Pan-fried Prawn with Mullet Roe Rice main course.  In the future, other dishes will be served in rotation, including appetizers like Seafood Salad with Truffle Sauce and Cherry Valley Duck and Scallop Salad with Mustard Sauce.  Additional main courses include MIPON Signature Dish Stir-fried Chicken with Three-Cup Sauce accompanied by Julienned Sweet Potato Rice, or Braised Beef Flank and Tomato with Quinoa Rice.

 

The launch menu in Premium Economy will will also feature the House Salad with Plum Sauce as an appetizer, and a main course of MIPON Stir-fried Pork Neck Meat with Sesame Oil and Plain Rice.  In Economy Class, customers will enjoy an appetizer of traditional Sesame Oil Tossed Stir-fried Pork and Rice, followed by a main course of MIPON Stir-fried Chicken with Sweet and Sour Sauce and Plain Rice.


Other rotating appetizers will include Shrimp Salad With Mango Sauce, and Chicken and Seafood Salad with Plum Sauce.  Additional Premium Economy mains will include Steamed Pork with Yolk and Quinoa Rice, as well as Stir-fried Chicken with Black Bean Sauce and Plain Rice.  Economy Class guests will enjoy other main dishes such as Signature Fried Rice Vermicelli with Shrimp, or Braised Pork Meat with Red Yeast Rice.
