Japan Airlines Announces Collaboration With Dean & Deluca; Finnair Teams With Chef DeAille Tam

On Wednesday, Japan Airlines announced a collaboration with Dean & Deluca Japan to provide exclusive meals on select flights. Finnair will team with celebrated Chef DeAille TAM to create a modern Chines menu on flights from Greater China to Helsinki.


Japan Airlines announced earlier this week a new collaboration with Dean & Deluca Japan to develop an exclusive limited-time menu for select flights to North America, Europe and Australia. Starting December 1, 2019, JAL Premium Economy and Economy Class passengers will enjoy a an exclusive “Air Dean & Deluca” meal featuring spicy Cajun chicken over turmeric rice with a side of fresh coleslaw. The special inflight offering will be available until February 29, 2020 on routes from Tokyo-Narita to Chicago, Dallas/Fort Worth, Boston, New York, Los Angeles, Seattle, Vancouver, Frankfurt, Helsinki and Melbourne. The limited-time Air Dean & Deluca meal will also be served on flights from Tokyo-Haneda to New York, San Francisco, London and Paris, as well as flights from Osaka to Los Angeles.

Finnair Business Class Customer Enjoys a Fresh Salmon Dish - Courtesy Finnair

On Thursday, Finnair announced a collaboration with celebrated Chef DeAille TAM to bring a modern Chinese menu to customers travelling in Business Class from Greater China to Helsinki, starting December 5, 2019. An award-winning chef, DeAille Tam was born in Hong Kong and has worked in top restaurants on three continents, becoming the first female Michelin-Starred chef in China in 2018. Chef DeAille Tam’s dishes are Chinese-inspired with a modern “East meets West” flare. In Thursday’s press release, Chef Tam said,


“One of my passions is to bring Chinese cuisine to a broader audience. My mission is to give people an experience when they eat, a memory to keep. I think the aircraft is a perfect place for this.”


Finnair’s Head of Inflight Food & Beverage Concepts, Maarit Keränen added,


“We are excited to collaborate with Chef Tam as she treats every flavor and every dish like a culinary adventure. Our Signature Chef program honors the cuisines of our key markets, and we are proud to have Chef Tam’s menu as part of our Finnair experience.”


The first menu will include a starter of “drunken prawns” tomato gelée, peas, taro crisp and garlic crema followed by a ribeye steak with black pepper jam, caramelized honey, pickled Chinese pepper, sweet potato and watercress nage.


Finnair launched their “Signature Chef” program in 2013 and has worked with acclaimed chefs from around the world to create unique “Signature Menus” for their Business Class customers. The airline currently operates from seven Chinese airports including Beijing-Capital, Beijing-Daxing, Shanghai, Nanjing, Guangzhou, Xián and Hong Kong.
