Cathay Pacific Expands Duddell’s Partnership With New ‘Hong Kong Flavours’ Menu

Cathay Pacific has today announced that guests will be able to enjoy an elevated onboard dining experience with new ‘Hong Kong Flavours’ menu options as part of the carrier’s extended collaboration with Michelin-starred Hong Kong restaurant, Duddell’s.

On Monday (March 4, 2024), Cathay Pacific announced an expansion of their partnership with Duddell’s, a Hong Kong based Michelin-starred restaurant.  The carrier has introduced a new ‘Hong Kong Flavours’ menu, showcasing authentic Cantonese and regional Chinese specialties, as well as refined takes on classic comfort dishes.  Expanding on the successful launch of their partnership with Duddell’s in February 2023, the new menu will be available to First and Business Class guests traveling on long-haul flights departing Hong Kong.  The latest Cathay Pacific menus are the newest in a series of collaborations with acclaimed local brands and restaurants.


In Monday’s announcement, Cathay Pacific’s General Manager – Customer Experience and Design, Vivian Lo, said,


“Hong Kong Flavours’ is a stalwart in the Cathay Pacific dining proposition, as it not only showcases some of our home city's most beloved and iconic dishes, but also represents our ambition to connect Hong Kong with the world through these culinary creations.  We are thrilled to deepen our partnership with Duddell’s, who shares our passion for food and commitment to elevating Hong Kong’s culinary scene, and no detail has been spared in the curation of these new inflight menus.  Together, we aim to provide our customers with an unforgettable culinary experience centred around authentic local delights delivered with warm, attentive service.”

First Class guests can start their culinary experience with an appetizer of crystal pork terrine with black vinegar, inspired by a specialty dish from Zhenjiang in China’s Jiangsu province.  This refined starter is made with pork knuckle that has been cured, boiled, pressed and thinly sliced, then topped with a sweet and tangy sauce made with aged Chinese black vinegar.  Next, customers can choose from an exquisite variate of main courses, including the sautéed abalone and chicken with Sichuan pepper and crispy greens.  This is a take on the traditional Chiu Chow dish, and featured tender abalone and chicken sautéed with Sichuan peppercorns, soy sauce and fish sauce, accompanied by delicate steamed winter melon rolls and deliciously fragrant salted fish and vegetable rice.


Another First Class selection is velvety steamed cod fillets layered with slices of Chinese ham and shiitake mushrooms.  The meal then concludes with a black sesame tart accompanied by tofu ice cream, inspired by the popular Chinese sweet black sesame soup.  The tasty dessert showcases an enticingly nutty and toasty black sesame mousse in short crust pastry, while the light and creamy tofu ice cream offers simple and comforting flavors.

For an appetizer, Business Class guests can enjoy the Sichuan-style poached chicken with sesame and chilli sauce, also referred to as ‘saliva chicken.’  This starter features lightly poached chicken laced with a rich and complex sauce, infused with sesame and red chilli, delivering a combination of spicy, fresh, fragrant and tender flavors all at once.  The main courses have also been carefully crafted and include braised pork ribs with hawthorn sauce and green apples.  The dish starts with tender pieces of fried pork ribs coated in a sweet, tangy sauce made with fresh hawthorn berries and a touch of apple cider vinegar. 


Business Class guests can also choose the hearty braised beef ribs with port wine, a perfect selection for the winter season.  The beef ribs are slowly cooked with port and tomato paste, resulting in a tender and succulent dish, accompanied by celery and carrots for a slightly crunchy texture and subtly sweet flavor.  The meal is concluded with a silky smooth tofu pudding, topped with soft and sweet azuki red beans from Hokkaido.


Opened in 2014, Duddell’s is located on the historic Duddell Street in the heart of Central Hong Kong.  The restaurant boasts a chic and relaxed interior designed by Ilse Crawford, as well as noteworthy exhibitions on the walls.  Duddell’s was designed to feel like guests have been welcomed into the home of a great art collector, which happens to have an in-house Michelin-starred culinary team, and features a year-round program of world class exhibitions, discussions and more.
