SWISS and the Romantik Hôtel L’Etoile Offer Guests a Taste of Canton Fribourg

From December 2nd through the end of May 2021, SWISS First and Business Class guests traveling on long-haul flights from Switzerland will enjoy new culinary creations from Canton Fribourg.

On Monday (November 30, 2020), Swiss International Air Lines (SWISS) announced the latest selection of culinary creations under their popular “SWISS Taste of Switzerland” program. The new offering will feature inflight delights created by Michelin-starred chef Alexandra Müller of the Romantik Hôtel L’Etoile in Charmey, Canton Fribourg. The menu will be available to SWISS First and Business Class guests traveling on long-haul flights from December 2nd through the end of May 2021.


SWISS First guests will enjoy a selection of starters and main courses concocted by Alexandra Müller including leek with egg yolk cream and truffle vinaigrette followed by venison with a Cuchaule crust and Botzi pear, a Canton Fribourg delicacy. For dessert, SWISS First travelers will enjoy white and dark chocolate Toblerone mousse with Breton biscuit crumble or meringues from local bakery, Angélo Rime, with double cream and Mirabelle plum compote. Additionally, First Class guests will be offered another popular specialty from the Fribourg region, saucisson du Vully and moitié-moitié fondue.


Long-haul Business Class guests will de delighted with a starter of beef entrecôte tataki with a beetroot-pear salad and Gruyère blue cheese. For the main course, Business Class travelers will enjoy Alexandra Müller’s braised beef brisket with demi-glace and sweet potato purée. For dessert, guests will enjoy a yuzu lemon meringue pie with Canton Fribourg’s famous Gruyère double cream. Naturally, the bespoke new meal creations will be rounded off with specialty regional cheeses from SWISS’s latest guest Canton. SWISS First and Business travelers can sample some locally crafted cheeses such as 15-month-matured Gruyère AOP, a Vacherin Fribourgeois Vieux AOP or a Bleu de Gruyère.


The airline’s celebrated “SWISS Taste of Switzerland” concept has been on offer since 2002, with a new Swiss-based chef invited every three months to showcase Switzerland’s culinary variety. Alexandra Müller’s menu will be featured onboard for six months, a first for the program.


Alexandra’s Müller’s Nova restaurant at the Romantik Hôtel L’Etoile proudly holds a Michelin star. Ms. Müller is a native of Frankfurt, Germany and developed her culinary skills with Lufthansa Group’s LSG Sky Chefs subsidiary. In 2000, she received the best training grades nationwide and was awarded a scholarship from the German Federal Government. Müller has served in various kitchens of high reputation including the Dorchester in London, the Ente in Wiesbaden, the Gstaad Palace and the Auberge de la Charrue near Lausanne. Setting out on her own in 2011, she moved to the Romantik Hôtel L’Etoile in Charmey, Canton Fribourg.
